Lactation Cookies
I started making these gluten-free, paleo-friendly cookies two years ago when I was having some struggles with breastfeeding. Now that so many of my dearest friends are having babies of their own I thought that this would be a great time to share this recipe.
These yummy cookies are healthy, nutrient-dense and are filled with lactation-promoting foods. They are a perfect quick snack for the busy mom who barely has time to feed herself. I like to make a big batch and freeze them, keeping a small container close at hand for a post-breastfeeding pick-me-up.
Ingredients
1 1/2 cups gluten-free flour ( I really like Pamela’s Baking Mix for this)
2 cups rolled oats
1 tsp sea salt
3 Tbs Brewer’s Yeast
1/2 cup flax meal
1/2 cup maple syrup
1 tsp cinnamon
1 tsp nutmeg
2 eggs
2 tsp vanilla extract
1/4 cup almond milk
1/4 cup coconut oil (melted)
1/2 - 1 cup chocolate chips
Directions
Preheat your oven to 350 degrees. In a large bowl, mix together all dry ingredients. Slowly add all of the wet ingredients one at a time and stir until thoroughly combined. Using a tablespoon, scoop and shape cookies, add them to baking sheet and bake for 10-15 minutes. Allow to cool and freeze or eat within 2 to 3 days. Because there are a bunch of ingredients and very few steps to follow, this is a great recipe to make with your toddlers and older children, having them mix in the ingredients one at a time!
