Gluten-Free Apricot Scones

The taste of apricot scones is so nostalgic to me. My grandma used to bake them all the time and the scent of them brings me right back to my childhood. I recently adapted her original recipe to a gluten-free version so my family and I could continue the tradition. They look a little different from the wheat-flour version, but the taste is pretty darn close to the real thing.

Ingredients

  • 3 Cups of your favorite gluten-free baking mix (I love Pamela’s)

  • 1/2 Cup milk

  • 1/2 Cup sugar

  • 3 Tbs orange zest

  • 2 Tsp orange extract

  • 1/2 Cup butter

  • 1 Egg

  • 1/2 Cup chopped apricots

Directions

Preheat oven to 350 degrees. In a medium bowl, add baking mix, sugar and softened butter. Mix until ingredients are thoroughly incorporated. In a small bowl beat egg and milk together, then add to the dry ingredients. Add orange zest, extract and mix thoroughly. Add a teaspoon of flour to the apricots and mix until they are coated, then fold them into the mixture. Use a non-stick baking tray, or line your tray with baking parchment. Using a large spoon, scoop dough onto the tray, about 2 inches apart. Bake for 20 to 25 minutes, until lightly golden.
