Clementine Dream
This recipe for clementine possets is a must try. A creamy, citrusy delight, perfect for spring and so easy that you can make it even with a toddler hanging off you!
Ingredients:
4 medium clementines
1 cup heavy cream
5 Tbs white sugar
Directions:
Using a large, sharp knife, cut three of the four clementines in half. Carefully remove the peels from the fruit and set aside. Take the de-peeled fruit and juice, setting aside for later use.
In a small sauce pan combine the zest of the remaining clementine, cream and sugar. Bring mixture to a boil, then down to a simmer stirring continuously. Simmer mixture for two to five minutes, until it starts to thicken slightly. Remove pot from heat and strain into a medium-sized bowl. Using a small whisk, incorporate the clementine juice. Pour your mixture into small cups, ramekins or the set-aside clementine peels.
Allow your possets to set in the refrigerator for three to twelve hours. Serve with clementine segments and dark chocolate. Enjoy!
