Pickles!

A few days ago I had the misfortune of breaking my foot and it has been super frustrating not being able to do all of the things I normally do. Thankfully, with an assist from husband and toddler, pickling is actually a really easy activity to do while seated. These are refrigerator pickles so there is no need for any complicated preserving process. All you really need to do is put all the ingredients in a jar together and wait. This is a super simple brine that works for everything from green tomatoes, to carrots, to peppers.

This is a great way to preserve food for yourself, but pickles also make wonderful gifts!

Ingredients:

  • dill

  • apple cider vinegar

  • black peppercorns

  • water

  • salt

  • sugar

  • garlic

  • your choice of vegetable, sliced

For a 16 oz jar: Fill jar with sliced cucumbers (or vegetable of your choice), one clove of garlic, a sprig of dill, 1 tsp peppercorns, 2 tsp salt and 1 tbs sugar. Add apple cider vinegar until it reaches just under half full. Boil water and add to jar, filling it to just under the top of the jar. Close jar tightly and gently shake. Refrigerate for a day before eating.

I highly recommend pickled green tomatoes as a sandwich condiment. They are seriously delicious.
