Mint Tea
A lot of our backyard is shaded, which means that we do not have a ton of space for growing vegetables and herbs. Mint is a plant that grows like a weed and does well in shade and partial sun. It also has a ton of uses in cooking and cocktail making so I love having it growing abundantly in my shade garden.
This time of year the mint begins to go to flower and starts dying back which means it is time for a big harvest. In my personal opinion the best way to use mint in bulk is to make tea. It is a great way to preserve the mint to use later and makes a great gift.
Dried Mint Tea:
Harvest fresh mint. Preheat oven to 170 degrees F
Wash and dry mint.
Lay out in a single layer on a baking sheet.
Bake for 2 to 2.5 hours, remove from oven and allow to cool.
Crumble leaves into a jar, discarding stems. Store in a dry pantry or similar location until use.
Brew, sip and enjoy!
