A Tropical Cocktail

Now that the weather is warming up and we are still stuck at home I have become very nostalgic for some of our favorite vacation destinations. My husband and I had our honeymoon in the Bahamas and my daughter’s first vacation was in Antigua so tropical cocktails remind us of those wonderful memories of time spend with our family. Taking inspiration from those trips I concocted a drink with some ingredients we had around the house – perfect for a zoom cocktail hour(s) with a few of our favorite people!

Serves 2

Ingredients:

  • 1 oz light rum

  • 1 1/2 oz dark or gold rum

  • 2 oz coconut milk

  • 2 oz pineapple juice

  • 1 oz lime juice

  • 1 oz orange juice

  • 1/2 oz pineapple liquor or simple syrup

Directions:

Mix all ingredients together in a cocktail glass or shaker with ice and mix VERY well. You can also put all ingredients and one cup of ice into a blender and blend until the mixture has reached your desired consistency. Pour into a fancy glass and serve.
